2 lbs grass fed stew meat-cut small
1 organic onion diced
7-9 organic carrots sliced thin
3- lg organic potatoes cubed
1/2 bag of frozen organic peas
1 carton of Trader Joes Organic Tomato Soup
Organic- pepper, parsley flakes, garlic
I like to add homemade beef or chicken stock if I have it- 1/2 cup
Sauté onion in bacon grease.
Add meat and season and brown lightly. You want the meat to cook slow and long in the stew to get nice and tender.
Add everything else and simmer on low all day. Do not rush this stew. It will be even better tomorrow if it makes it that long.
Serve with fresh sourdough with plenty of butter.
