When I asked Manny if he wanted to eat dinner at the table he wanted to light his candle, get his "Jesus" book and his crosses. He wanted his picture taken with the crosses so he could see himself with them. The one is plain and the other has Jesus on the cross and he kisses it and says "Jesus has boo boos".

Steamed with some Kerrygold butter and sea salt. Manny calls them "trees" and loves them.

Bacon Wrapped Chicken


OK, I've been think about this idea for a while and finally decided to try it.  It was good but I will make a few changes for next time.
Next time I will use thighs instead of tender.  I just like the consistency and flavor better.  Also, I will bake it longer and it was best and needed some sort of sauce.  I did do some with a bbq/apricot jelly mix and they were the best.  They would need basted at least once and I think flipped too. 
Over all I really liked it. 
 
 

What's Playing in My Kitchen While I Work

I finally got an ipod music doc for Christmas this year and I love it.  It wasn't too expensive- $40.00 Black Friday sale at Target- and it plays really nice.  I love to listen to these two apps.  The one playing is THE RUDDER from the OCN.  It has beautiful Liturgical Chant.  Also with that app. you get THE ANCHOR , Orthodox talk radio and THE ARK- "The Ark provides a listening experience of the best of contemporary music from an Orthodox perspective, along with the best of traditional Orthodox liturgical music selected for Western ears". The other is ANCIENT FAITH RADIO.  I'm new to this one so I'm still trying to figure out how to get the podcast so that I can listen to them but the music is beautiful. 
 

Crust less Breakfast Quiche

This was very good-

4 pastured eggs
3/4 cups of raw cream or raw whole milk
1/2 cup of steamed organic broccoli
5 slices of free range, crispy bacon crumbled
1/2 cup shredded cheese of your choice
salt
pepper

blend eggs, cream, salt and pepper with immersion blender
fold in broccoli, bacon and cheese
pour in baking dish-I used a small glass pie pan that I greased with bacon grease.
sprinkle top with a little more cheese, diced green onions if you have them and some of the crumbled bacon

Bake at 375 covered for till almost set then take off foil just to brown.

Pioneer Woman's Chicken Spag. Remake

My homemade "cream soup"
Ugh, look at those ingredients

We baked a whole organic chicken for dinner on Sunday and then yesterday I simmered the skin and bones (sounds better than "carcass" right?) to make bone broth.  So today we wanted PW Chicken Spaghetti but after I sent my husband out for the cream soup and Madison looked at the ingredients she said, "mom, can't we make this much better.  Look at what's in here!"  Yuck,  we have been trying so hard to eat healthy and I have no idea what some of that stuff is let alone the sources for the ingredients.  So we looked around Pinterest for the basics and came up with our own "cream soup" base using our homemade stock.  Sorry no measurements as we just were winging it but here's what we used-
real butter
real cream
sea salt
fresh garlic
fresh shallot
homemade free range chicken stock
pepper
Frontier natural season salt
King Arthur unbleached/unbrominated flour
It came out great!

Now I'm going to steam some organic broccoli on the stove since she also keeps me in line when it comes to using the microwave.  (I would ditch it but Tommy would never go for it and its just so darn temping there.)
