Beef, Bella and Marsala

I would like to thank my Grama Annie for the cooking gene- so would my husband and children. I would also like to kick myself for going to collage and not culinary school but I probably wouldn't have met my husband Anyway here is my latest wonderful creation.......sorry there are no exact measurements
Beef tips cut small - about a lb.
Package of baby Bellas halved
Onion -1 sliced thin
Clove of garlic - minced
Marsala cooking wine
Smart balance marg or olive oil
Sour cream
Egg noodles - cooked and lightly buttered

In a not nonstick heavy pan cook down onions and mushrooms in the marg. adding the garlic at the end with some sea salt to taste- remove from pan
With pan really hot add the beef, some salt and about 2 tablespoons of flour sprinkled on and brown- don't cook just brown- remove from pan
Next add to hot pan about 1/3 cup of Marsala wine to deglaze the pan
Add the veggies and meat back in
Put it in the oven at 325 to 350 but no higher, covered for about an hour and a half -check after 45 mins to see if you need to add a lil water but you don't want it more than about an inch high to keep the flavor strong and not watered down, I may add a little wine instead of water.
When meat is fork tender remove from oven and serve over noodles or I like to add about a scant 1/4 cup of sour cream.  Just stir it in to make it nice and creamy.  You can also sprinkle on a tad of Gorgonzola cheese but don't overpower it please.

Happy Birthday to me!

Well I had a wonderful bday and mothersday weekend. I have no problem turning 38 cause I love my family and I love my life! I am sooooo blessed.
