Sour Cream Blueberry Bunt Cake

   
Here's the recipe from Taste of Home-

Ingredients

  • 3/4 cup butter, softened
  • 1-1/2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (8 ounces) sour cream
  • FILLING:
  • 1/4 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 cups fresh or frozen blueberries
  • GLAZE:
  • 1 cup confectioners' sugar
  • 2 to 3 tablespoons 2% milk

Directions

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition.
  • Spoon a third of the batter into a greased and floured 10-in. tube pan. Combine brown sugar, flour and cinnamon; sprinkle half over batter. Top with half of the berries. Repeat layers. Top with remaining batter.
  • Bake at 350° for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Combine glaze ingredients; drizzle over warm coffee cake. Yield: 10-12 servings.
  • I can't even tell you how wonderful this cake was..... 
  • Other than using organic ingredients I didn't change the recipe

Homemade Raspberry Cheesecake Ice Cream

Wow this went fast, I didn't even get a good picture before it was gone!
I didn't measure any ingredients as usual but here's the list-
Fresh Cream-skimmed of my raw milk
Raw sugar
Vanilla
Fresh raspberry syrup
When it's at ice cream stage add in 1 slice or 2 of cubed frozen cheese cake and just blend in to keep it in chunks
I had mine with candied walnuts on top that I made a few hours earlier. It was awesome!

The best thing about summer...

BERRIES!!!!

And fresh fruit and veggies. There are such wonderful things you can cook and bake with them like pies.
Today the boys and I ran to Triple B Farms- a local farm here- and picked up some fresh berries and apples for fresh eating with yogurt and for pies. Oh, do I love to bake. Another wonderful farm in the area called Sand Hill Berries makes a delicious pie with blueberries, cherries and raspberries but since its pretty pricey I just took there idea and make my own- no cherries today though.

Here are the pies before I put them in to bake. Note that I make 2 smaller pies instead of 1 larger pie sometimes to please everyone in the family. Usually it is 1 berry and 1 apple like today.
