Inspired by the Avengers

Shawarma (sorry I had already taken a bite)

 
 
Recipe from About.com edited to how I made it.

Ingredients:

  • 1 1/2 lbs boneless, skinless chicken thighs cut in thin slices
  • 1 cup plain yogurt
  • 1/4 cup vinegar
  • 2 cloves garlic, crushed
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon allspice
  • juice from 1 lemon
  • ___________________________
  • FOR THE SAUCE:
  • 1 cup sour cream or yogurt
  • couple dashes of garlic salt
  • couple dashes of dill
  • 2 tablespoons of finely grated cucumber
  • ___________________________
  • PITA FILLINGS:
  • Naan bread from TJ's
  • thinly slice cucumbers
  • thinly sliced onions (red)
  • thinly sliced tomatoes

Preparation:

Combine all ingredients except for chicken, fillings, and sauce ingredients to make marinade. If it seems a little dry, add a little olive oil (a tablespoon at a time).

Add chicken, cover and refrigerate at least 8 hours, preferably overnight.

 Make sauce and refrigerate too.
 
                                          
In a  large saucepan, cook chicken over medium heat for 25  minutes or until done. Be sure not to overcook! If chicken becomes a little dry, add a few tablespoons of water throughout cooking duration.

 Assemble and enjoy!  This is a new family favorite (except for Marlee and Mason)
 
Near the very end of the movie, Ironman is just beat down and confused and asks them if any of them have ever eaten Shawarma and suggests they go get some.
 
If you watch Avengers through the credits you see them all in the restaurant eating Shawarma.

Just watching......

He can't wait to try it.
 We bought a Showtime Rotisserie over a year ago at a church yard sale and I have never been brave enough to try it yet but last week my husband spotted it and said "are you ever going to use that thing?". So today I decided to give it a go. Let's hope it actually works.

Time to take it off.

All done.

Overall it came out very good.  It was nearly 4 lbs and cooked in an hour.  Next time I may let it go a little longer and try and find out if I can marinate it first for more/better flavor.

Melt in Your Mouth Chicken

No kidding. This chicken is breaded, fried, then baked and is like butter! It's a variation on what my mom makes and we call "party chicken".
What you do is cut up your chicken- she uses tenders but I changed it up and used boneless, skinless thighs because my oldest daughter got spacers put in and her teeth are sore- anyhow you do the usual breadcrumb then milk/egg back to the breadcrumb again breading then I lightly fried them if Safflower oil and put them in my new Le Creuset pot raised on one of those thingies that keep your meat from laying on the bottom so that I can put some water in to keep the chicken moist and also let the excess oil drip down
I baked it for about an hour and 350 covered and they love it.

Chicken Anyone?

I'm going to try and keep a running list of chicken dishes so that I can reference it when I planning meals or in a hurry and need something quick.

Chicken Tenders-

Grilled
Breaded and Fried

Rotisserie or Baked-

Gravy and Mashed Potatoes, Veggie

BBQ Pizza- Crust, Sauce, Pizza Cheese, Gorgonzola Cheese, Chicken and BBQ Sauce

Enchilada's-
Pour some tomato sauce on a bottom of a 9 X 13 or larger baking pan.
to prepare tortillas -
Spread some refried beans on it, then add some cheese, then add steamed broccoli and chicken and then cheese again. Fold each sides in and place in the pan with the fold facing up. If it starts to open up, I usually pour a little tomato sauce on top of it so the sides stick to each other.
Do that for all the tortillas and line side by side in the pan. Note: For 8 enchiladas I use a 11 x 19 pan and have 6 enchiladas in a row and other 2 are put in the pan in the opposite direction on one side.
Then pour tomato sauce over top all the tortillas and you have to be generous or else they will get dried up. Make sure the sauce is all around the sides of the pan or else they will stick to the pan and it will be difficult to get out after baked. Then place shredded cheese on top of all them. Bake at 350 for about 1/2 hour or until the middles are hot and the cheese is melted through.

Chicken Stuffed Shells-
Boil till al dente large shells to prepare them
Make a mixture with shredded chicken, mayo, prepared stuffing mix. Stuff shells and pour cream soup mixed with milk or broth over. Bake till heated through.
