I can't remember if I had posted these before but they are worth a second post anyway. My gram used to make these for us all the time and they are wonderful, especially for those of us who like more crust than filling in our pie. When I saw Johnnygold apples for a great price at Costco this weekend they were the first things to pop in my head. I have also been looking for a way to try out this new organic soft wheat pastry flour I found in bulk at the wonderful Market District Giant Eagle. I'm so excited! Can't wait till they are cool enough to eat.
